Regina's Famous Chocolate Chip Cookies by Regina
Ingredients:
2 cups unbleached flour
½ t. non aluminum baking soda
½ t. sea salt
1 cup firmly packed light brown sugar
¼ cup maple syrup
½ cup canola oil
2 T. ground flaxseed
3 T. water
½ cup coconut
½ cup walnuts
2 cups vegan semi sweet chocolate chips
Direction:
Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
Combine flour, baking soda and salt in a bowl.
In a blender add the flaxseed and water and blend until frothy, about 2 minutes.
In
a large bowl or stand mixer combine brown sugar, maple syrup, canola
oil and flaxseed mixture. Add the dry ingredients until combined. Fold
in chocolate chips, walnuts and coconut.
For large cookies use an ice cream scoop and place 2 inches apart on the cookie sheet.
Bake
15 to 18 minutes until golden brown. Place cookies on a cooling rack.
These cookies are so amazing. The non vegans will never know the
difference!
